This recipe?is healthy and the kids will love it!?Serves 2-3 people
Ingredients
- 1 whole chicken
- 2 red capsicum (diced)
- 2 punnets of cherry tomatoes (cut in half)
- 200g of pitted green olives
- 60g of capers
- 100g of shallots (cut in half)
- 2 tablespoons of olive oil
- Sea salt to taste
- 1 bunch parsley
Method
- Preheat oven to 220 ?C
- Clean the chicken; remove the spine and the wings, cut the breast and leg into two pieces each
- Add half of the olive oil and chicken pieces to a heavy based roasting pan with the skin side down
- Roast the chicken in the oven for 3-7 minutes or until golden
- Turn the oven down to 150?C
- Add the capsicum and cherry tomatoes to the pan and cover with a lid and cook for one hour
- After the first hour, add the shallots, green olives, and capers, and cook for another 2 hours covered with a lid
- After the total of three hours in the oven the chicken will be nice and tender, finish with some fresh parsley, a drizzle of olive oil, and a sprinkle of sea salt.
- Sprinkle some parsley over to serve
